Pumpkins and squash are great in tarts, and it’s the mixture of sweet and salty in savoury pumpkin tarts that really gets me,” says food writer Diana Henry. Pumpkin tarts with spinach and gorgonzola Serves: 6 Ingredients: For the pastry: 225g plain flour, plus more to dust 175g butter, chilled and chopped Sea salt flakes For the filling: 450g pumpkin or squash Olive oil 450g spinach, coarse stalks removed 2 large eggs, plus 1 egg yolk 275ml double cream 50g parmesan cheese, finely grated Freshly grated nutmeg 200g gorgonzola cheese Freshly ground black pepper Method: 1. For the pastry, put the flour, butter and a good pinch of salt into a food processor and pulse-blend the mixture until it resembles breadcrumbs. Add just enough very cold water to make the pastry come together. Wrap it in foil or clingfilm and refrigerate for about half an hour. 2. Preheat the oven to 180C fan (375F), Gas 5. 3. Cut the pumpkin or squash from top to bottom into broad slices, remove the inner stringy bits and seeds, then peel. Brush lightly with olive oil and bake for 30-35 minutes, or until just tender. Turn off the oven. Put the spinach into a large saucepan, cover and wilt in the water left clinging to it (about four minutes over a medium heat). Drain well and leave to cool. 4. Make the custard by mixing together the eggs, egg yolk, cream and parmesan. Season well. Roll out the rested pastry on a lightly floured surface and use it to line six individual tart tins. Chill for another 30 minutes (or just stick them in the freezer for about 15 minutes). 5. Preheat the oven again to 180C fan, Gas 5. Prick the bottom of the tarts with a fork, line them with baking parchment and put baking beans or ordinary dried beans on top. Blind bake for 10 minutes. Remove the paper and beans and cook the pastry cases for another five minutes. 6. Cut the pumpkin into small slices, about 10 centimetres long and one centimetre thick. Squeeze every last bit of water from the spinach and chop it up. Season both of these and add some freshly grated nutmeg to the spinach. Spread the spinach over the bottom of the tart cases, then add the slices of pumpkin and dot with nuggets of gorgonzola. 7. Pour the custard mix over the tarts and bake for 25-30 minutes, or until the pastry is golden and the custard feels only just set when you put your forefinger in the centre of a tart. Leave for 10 minutes to let the custard finish cooking and set a little once you have taken it out of the oven. Beef pie with wild mushrooms and red wine With wild mushrooms and red wine, this beef pie is perfect as the days get shorter and colder. Serves: 6 Ingredients: 1kg braising beef, cut into large chunks 30g dried wild mushrooms Groundnut oil 350g baby onions, or small round shallots, peeled but left whole 50g butter 1 celery stick, finely chopped 2 garlic cloves, crushed 30g plain flour 300ml red wine Leaves from 3 thyme sprigs 3 bay leaves 300g fresh mushrooms, sliced 3 tbsp finely chopped flat leaf parsley leaves 320g puff pastry for 1 big pie, 600g for 6 small pies 1 egg, lightly beaten Sea salt flakes and freshly ground black pepper Method: 1. Dry the meat well with kitchen paper (if it’s wet it won’t brown properly). Put the dried mushrooms in a heatproof bowl and pour enough boiling water over to just cover. Leave to soak for 30 minutes. 2. Heat two tablespoons of oil in a heavy-based casserole and brown the beef in batches: it is very important to cook it in batches otherwise the meat will not colour well. Remove each batch as it’s done. Add the baby onions or shallots to the pan and lightly brown them, adding a little more oil if you need it. Reduce the heat, add 20 grams of the butter and all the celery and garlic, and sweat for 10 minutes. Return the meat, with any juices, to the casserole. Season well and, over a low heat, add the flour. Stir everything round until it is well coated. Cut up the mushrooms and add to the pot with their soaking liquid (strain the liquid through muslin, as it can be gritty). Add the red wine, thyme and bay leaves and bring to the boil. Immediately reduce the heat, cover and cook over a very gentle heat for one-and-a-half hours, stirring every so often. Take the lid off for the last 15-20 minutes to reduce the liquid. You need thick juices for a pie, so, if they’re too thin, remove the meat and mushrooms and boil to reduce the sauce. 3. Melt half a tablespoon of oil and the remaining butter in a saute pan and cook the fresh mushrooms briskly over a high heat so that they get well coloured. Season and let the mushrooms cook until they exude their liquid and it evaporates. Stir the parsley and the cooked fresh mushrooms into the meat and check the seasoning. Leave to cool completely. 4. Put the meat in one large or six small pie dishes and roll out the pastry to fit the dish(es). Cut a strip or strips large enough to go around the edge or edges. Brush the edge(s) with water and press the strip on. Dampen this with water and cover the pie or pies with their lids, pressing the pastry down. Trim off the excess, knock up the edges and crimp them, if you like, or just press with a fork. Use the remaining pastry to decorate, making little holes in the top for steam to escape. Brush with the beaten egg and chill for half an hour. Preheat the oven to 190C fan, Gas 6. 5. Bake in the oven for 40-45 minutes for one large pie, or 25-30 minutes for smaller pies. Serve immediately. Pecan and pear upside-down cake “The cranberries look beautifully jewel-like on this cake, which can be eaten warm as a pudding as well as with tea or coffee,” says Henry. “The fruit combination also works well in a Tarte Tatin. The ginger here is optional, but it mutes the sweetness a little.” Serves: 10 Ingredients: For the fruit and nuts: 75g unsalted butter 115g caster sugar 350g firm pears (about 2) 140g cranberries 75g pecans For the cake: 120g unsalted butter, softened 200g caster sugar 2 large eggs, separated Drop of vanilla extract 210g self-raising flour 1 tsp baking powder 1 tsp ground ginger (optional) 175ml full-fat milk Method: 1. Preheat the oven to 180C fan (375F), Gas 5. 2. Melt the butter and sugar for the fruit and nuts in a heavy-based ovenproof saute pan, 25cms in diameter, over a low heat. Peel and core the pears and cut them into slices, about 1cm thick, then place them on top of the butter and sugar. Cook these over a gentle heat until just tender, then whack the heat up and cook them until lightly caramelised. Scatter the cranberries and pecans on top and gently mix all the fruit around. Turn the heat off, but don’t let the pan get cold. 3. For the cake, cream the butter and sugar and add the egg yolks and vanilla. Mix in half the flour along with all the baking powder and ginger, if using. Add the milk and then the other half of the flour. Mix until smooth. 4. Whisk the egg whites until they form medium peaks. Add one tablespoon of the beaten whites to the batter to loosen it, then, working quickly, fold in the rest with a large spoon. 5. Spread the batter over the fruit and nuts in the pan and bake in the preheated oven for 35-40 minutes, or until a skewer inserted into the sponge comes out clean. 6. Leave the cake to cool for 10 minutes before turning it out, but no longer, or the caramelised fruit will stick to the pan. The dish that defines me: Rosie Grant’s gravestone recipes
Defining Dishes is an IndyEats column that explores the significance of food at key moments in our lives. From recipes that have been passed down for generations, to flavours that hold a special place in our hearts, food shapes every part of our lives in ways we might not have ever imagined. I run a TikTok called @ghostlyarchive, where I share recipes from gravestones mainly across the US that I make and eat. It all started in 2021, while the Covid pandemic was still ongoing. I was studying to be a librarian. One of my classes was about social media and we were tasked with creating a fresh social media account and had to pick a niche. At the same time, for the same library programme, I had to choose a library or an archive to intern with. I found a fairly virtual internship that let me do things safely outside and in person – which was at a cemetery. I ended up interning in a cemetery archives at a congressional cemetery in Washington DC, and this ended up being my social media niche, too. I chose TikTok, which I was new to at the time, and the class required me to post something about my niche every day for three months. So I learnt that there was a whole section of TikTok called “GraveTok”, where there were gravestone cleaners, preservationists and historians posting content, as well as people who just really loved cemeteries and the storytelling around them. I was posting everyday, and when you post everyday, eventually you’re just sharing anything that you come across that’s vaguely interesting. So at first, it was just about the internship, then I moved on to featuring other gravestones in DC. I started sharing any interesting grave or memorial that I was learning about, and that’s how I heard about Naomi Odessa Miller-Dawson’s grave recipe. Naomi has a really beautiful gravestone in Brooklyn, New York. It’s shaped like an open cookbook and features ingredients for her signature spritz cookies, a type of butter cookie that is made using a cookie press. I remember seeing a photo of Naomi’s gravestone and wondering what they tasted like. Because it was during pandemic times, when we had a lot more free time, I had been learning how to cook more and became really curious about this recipe. So I made them, shared the process on TikTok, and it exploded overnight. People were really intrigued by the grave recipe. In the comments, they were asking questions like: “I didn’t know this, who makes these? Are there other gravestones like this?” Or sharing their own experiences saying: “My mum has a really good recipe” or “This is how I make my cookies”. After that, I learned more about who Naomi was and while I was doing that, I was learning about other gravestones with recipes on them that were featured in local blog posts or posted to Twitter, or even on local news. That’s where the project originated. I’ve now made 23 grave recipes, but that first one was such a journey and I’ll remember it forever. The very first time I made the spritz cookies, I baked them incorrectly because there were no instructions on the gravestone and I didn’t know what a spritz cookie was. I made them in little circles and later learned from people commenting on the video that I was supposed to use a cookie press, so I bought one and made them again. They are really beautiful, delicate little butter cookies that you can decorate. I initially thought they were a sort of sugar cookie, because that’s what the ingredient list sounded like to me, but when I figured out what they were and the proper way to make them, it was such a revelation. Eventually, I met Naomi’s family and made her recipe with them. It was so interesting to learn about her family. I felt very honoured that they welcomed me and took the time to talk about who this woman was and what she meant to them. Naomi was the matriarch of her family and an excellent cook. No one was allowed to bring takeaway food into her home because she would say: “I can cook better than anything you can get at a restaurant.” Her son talked about sitting at the counter in her kitchen, just waiting for the cookies to come out of the oven so he could have a freshly baked one immediately, and he did the same thing when we were cooking together. I often think about how the recipes that get put on these graves are such a big part of family food traditions, which is very cool to me. When I met Naomi’s son and granddaughter, who now live in Pennsylvania, we drove past her old house and visited her grave in the cemetery and heard stories about her. I felt close to Naomi, even though I’d never met her. There’s something about food that connects you to so many memories and people of the past. For example, I’ve never met my great-grandparents, but my mother still cooks her grandmother’s recipes and she still talks about this person when she cooks them. It’s a really interesting connection to the tastes, smells and sights that my great-grandmother, who was an Irish immigrant, had. Weirdly, she is actually buried in the same cemetery as Naomi! There is something about food that makes us feel more present with our deceased loved ones. I don’t know what it is, but food has this amazing quality to do that. Other grave recipes that I’ve tried and continue to make include a fudge recipe from Utah and a snickerdoodle recipe from California. I’ve also made two grave recipes from Israel, which were both written in Hebrew. One of them just had the ingredients on it and his widow told the press that if you know how to cook, you’ll know what to do with them. Well, apparently I don’t know how to cook because I had no idea! Luckily, I work part time at the American Jewish University and their librarians both read and speak Hebrew, so they helped me translate the grave. They decided it was a type of mildly sweet yeasted bread and I’ve made it a few times now, it’s really delicious. My friends have asked for that one very frequently because it’s really an objectively good bread. Most of the recipes that end up on graves tend to be baked goods, or sweet recipes, there are a lot of cookies, cakes, pies, cobbler, ice cream. There are a few savoury ones, like a meatloaf, two cheese dips, and a chicken soup. But the rest of them are pretty much desserts. I think they are chosen according to what is comforting for those who are still around. They think: “My grandma made this thing and I immediately associate that thing with her, or my mum or dad, or whoever”. They have a signature dish and get excited when they think about it, and I think that’s how they choose what to put on the grave. Rosie Grant is an archivist currently living in Los Angeles. Starbucks faces lawsuit as customers claim refreshers contain no fruit
A woman is suing Starbucks for “false and deceptive practices” over claims that the coffee company’s iced, fruit-filled refresher beverage actually contains no fruit. Joan Kominis from Queens, New York, filed a complaint in August 2022 after learning that Starbucks’ Strawberry Acai Lemonade Refresher contained no actual acai. Court documents filed in the southern district of New York claim that “unbeknownst to consumers, the Mango Dragon Fruit and Mango Dragon Fruit Lemonade Refreshers contain no mango, the Pineapple Passionfruit and Pineapple Passion Fruit Lemonade Refreshers contain no passionfruit, and the Strawberry Açaí and Strawberry Açaí Lemonade Refreshers contain no açaí.” Kominis and her co-plaintiff, Jason McAllister of California, are seeking damages in excess of $5m. Starbucks has since called the allegations “inaccurate” and “without merit”. On Tuesday 19 September, US District Judge John Cronan rejected Starbucks’ request to dismiss nine of the 11 claims in the class-action complaint because “a significant portion of reasonable consumers” would assume that the beverages in question would contain the fruit in their names. The plaintiffs have said the main ingredients in these beverages were water, grape juice concentrate, and sugar. They claim the refreshers “differ from other Starbucks products” in that the product doesn’t contain items in their name. “Starbucks’ hot chocolate contains cocoa, its matcha lattes contain matcha, and its honey mint tea contains honey and mint,” reads the complaint. While they noted that the refresher drinks do in fact contain freeze-dried pieces of strawberries, pineapple and dragon fruit, they claimed that Starbucks “does not affirmatively indicate anywhere which ingredients are and are not in the products.” Starbucks had said that the fruits mentioned in the refreshers titles are meant to “describe the flavours as opposed to the ingredients.” Judge Cronan disagreed, writing in his ruling: “Nothing before the Court indicates that ‘mango,’ ‘passionfruit,’ and ‘açaí’ are terms that typically are understood to represent a flavour without also representing that ingredient.” In Kominis’ original filing, she claimed that she was going to buy a Strawberry Açaí refresher specifically for the açaí benefits. The suit stated that açaí berries and juice “are known to provide benefits to heart health, cognitive function, and contain anti-cancerous properties.” “Had she known that the product did not contain açaí, she would not have purchased it, or would have paid significantly less for it,” the document read. Kominis said that she and other consumers bought these menu items and “paid a premium price” based on Starbucks’ naming of the refreshers, and would either not have purchased them or “paid significantly less for them” had they been aware they were missing one of the named fruits. “The allegations in the complaint are inaccurate and without merit,” a Starbucks spokesperson told Today. “We look forward to defending ourselves against these claims.” One claim of fraud and another for unjust enrichment were dismissed from the suit, but Starbucks will have to face the rest of the allegations. The Independent has contacted a spokesperson for Starbucks for comment. This is the second lawsuit an American food chain has faced in recent weeks. Fans of Subway’s sandwiches are up in arms after stores in Pakistan launched its first ever 3-inch mini sub as a budget-friendly option. The bite-size sandwich, which recently appeared on Pakistani menus and in social media posts, provides “value” to customers, a spokesperson for Subway told Bloomberg News last week. The new size is half the length of the company’s previous smallest sandwich, which is six inches. Its largest size, otherwise known as the “footlong” sub, is 12 inches. But the newer, cheaper, size is said to be a more bite-sized option to fulfil a “snack craving”. Announcing the launch, a post shared by Subway Pakistan’s Instagram account read: “Say hello to our NEW Mini Sub! The perfect treat for your snack cravings! Get ready to fall in love with its incredible flavors!” A second post added, “Our New Mini Sub is the cutest explosion of taste you’ll ever experience!”, followed by the slogan: “Unleash the mini magic”. The reduced size comes as Pakistan contends with Asia’s fastest rates of inflation, which has seen double-digit percentage increases in the price of fuel amid a cost of living crisis. The August data from Pakistan’s statistics bureau showed that food inflation was elevated at 38.5 per cent. Confronting rising prices, many restaurants have reportedly increased prices on their menus or reduced portion sizes. Pakistan was saved from debt default after securing a further $3bn bailout disbursement from the International Monetary Fund (IMF) in July. However, the deal has come with specific measures attached, including an increase in fuel and energy prices. These rising energy costs have sparked protests among citizens across the country. Meanwhile, Subway fans have been expressing their disappointment about the “tiny” size of the new sandwich. “No one is walking outta the shop after eating this and feeling full,” wrote one Twitter/X user. “That’s like 2-3 bites!” wrote one social media user, as another added: “This would barely feed a toddler.” While it seems that the mini sub has only been rolled out in Pakistan so far, it is unconfirmed whether the menu item will be available at other global stores. Each dish is based on gut-healthy combinations of foods to showcase how easy and delicious it can be to cook to support digestive health. c. From a vibrant breakfast smoothie bowl, to tasty sardines and cherry tomatoes on toast, comforting smokey beans, a fresh pea and prawn stir-fry, herby meatless meatballs and a zingy Mexican chicken and black bean chilli, there’s a dish for everyone to enjoy this Love Your Gut Week and beyond. Breakfast smoothie bowl This smoothie bowl makes a great nutritious breakfast to help kick start the day. Thanks to the oats, muesli, fruit, nuts and seeds, this dish contains dietary fibre, which helps the passage of food through the gut and feeds healthy bacteria. Government guidelines recommend that adults in the UK should consume 30g of fibre per day, but most only manage about 20g. This recipe also provides plenty of plant points, as well as calcium, protein, vitamins and minerals, and a range of polyphenols – to help support the good bacteria in the gut. Prep time: 5-10 minutes | Cooking time: NA Serves: 4 Ingredients: 250g live, plain, dairy yoghurt or plain, vegan yoghurt 2 ripe, medium sized, peeled bananas 30g rolled oats 120g frozen mixed berries, defrosted 80g muesli (no-added-sugar) 20g mixed seeds ie, sunflower, pumpkin, poppy, linseed 30g walnuts, chopped 150g fresh seasonal fruit such as blueberries, raspberries, kiwi, blackberries, strawberries Method: Place the yoghurt, bananas, oats and defrosted berries into a blender and blitz until smooth. You may have to do this in batches. Pour the smoothie mixture into the base of four bowls. Scatter the seeds of your choice into a small pan and heat gently until they are just beginning to brown. Remove the pan from the heat and allow to cool slightly. Sprinkle the muesli between the four bowls, followed by the toasted seeds and walnuts. Prep time: 10 minutes | Cooking time: 15 minutes Serves: 4 Ingredients: 4 slices of toasted wholegrain bread 1 clove garlic, peeled 2 tins sardines in oil 150g cherry tomatoes, cut in half 85g watercress 1 lemon, cut in half 4 dessertspoons kimchi or sauerkraut 20g fresh parsley, chopped Method: Rub each piece of toast with the garlic and place on a plate. Remove the sardines from the tin reserving the oil. Cut each sardine in half lengthways along the side where it has been gutted. Divide the sardines between the four pieces of toast. In a small bowl, mix the oil reserved from the sardines with the tomatoes and the watercress. Squeeze a little of the lemon over the tomatoes and watercress and mix well. Scatter the tomatoes and watercress around the sardines on toast and add a serving of kimchi or sauerkraut on the side. Finish with a sprinkle of chopped parsley. Cooking tip: Store any leftover sardines in an airtight container. Left over sardines can be mashed with a little olive oil and lemon juice and used as a sandwich filling. Smokey beans topped with feta cheese and coriander Step aside beans on toast, this wholesome and warming smokey beans dish is packed full of different beans and tasty veggies to add depth and texture, helping to keep the gut happy. The beans are a good source of fibre and a complex carbohydrate, meaning it is digested slowly by the gut. The combination of herbs and spices also increases the diversity of plants in the dish and adds additional micronutrients. Prep time: 10 minutes | Cooking time: 25 minutes Serves: 4 Ingredients: 1 tbsp olive oil 1 medium onion, sliced 2 sticks of celery, diced 2 red peppers, seeds removed and roughly chopped 2 cloves of garlic, peeled and chopped 2 tsp smoked paprika 1 tsp ground cumin 2 x 400g tins of mixed beans, drained 400g can chopped tomatoes 150g feta cheese, crumbled Small bunch coriander, leaves and stalks chopped (or fresh parsley) Method: Warm the olive oil in a large pan and add the onion, celery, red peppers, garlic, smoked paprika and cumin. Cook for a few minutes until the vegetables are soft but not coloured. Add the beans and chopped tomatoes to the vegetables. Fill one of the empty cans with water and add it to the pan. Add half of the chopped coriander. Stir well and bring the pan to the boil. Turn the heat down to a simmer and cook for 20 minutes until the tomato sauce is rich and thick. Add a splash of water if the sauce for the beans gets too dry. Divide the beans between four plates and scatter with crumbled feta cheese and chopped coriander. Serve with baked sweet potato wedges or wholemeal brown rice. Cooking tip: Both the tender stalks and leaves of coriander can be chopped up and used in recipes. If you don’t like coriander, you can use fresh parsley instead. Pea and prawn stir-fry with ginger and coconut This tasty, one pot meal is a real crowd pleaser that screams gourmet but is super simple to make. It’s also great for the gut. The peas and sugar snap peas provide soluble dietary fibre. This means that it is a prebiotic, which acts as food for healthy gut bacteria to feed on. Soluble fibre dissolves in water and can help the passage of food through the gut and soften stools. It also contains ginger, which has been shown to help relieve gastrointestinal discomforts in clinical studies. The colourful vegetables also contain polyphenols, which are known to increase the diversity of bacteria in the gut. Prep time: 10 minutes | Cooking time: 20 minutes Ingredients: 6 spring onions 2 cloves of garlic, peeled and chopped 1-2 fresh red chillies, seeds removed and chopped ½ stalk of lemongrass (optional) 20g piece of fresh ginger, peeled and finely chopped 1 orange pepper, cut into strips 1-2 tsp olive oil 340g frozen king prawns, defrosted 150g sugar snap peas 100g frozen peas, defrosted 80ml coconut cream 100ml vegetable stock 2 limes. Juice and zest one. Cut the other into 4 wedges 30g coriander, leaves and stalks roughly chopped 1 tsp Thai fish sauce 4 nests of wholewheat noodles Method: Trim the spring onions and cut into 2cm lengths. Discard the outer layer of the lemongrass (if using) and finely chop the bottom part of the stem. Drizzle a little oil into a large frying pan or wok and cook the spring onions, garlic, chilli, ginger, lemongrass, and pepper strips over a medium heat until soft but not coloured. Add the prawns, sugar snap peas, peas, coconut cream and vegetable stock to the pan. Add the lime zest and add half of the chopped coriander. Bring the pan to a simmer. Cook gently for 5 minutes or until the prawns are cooked (they will turn pink) and the vegetables are tender. Just before serving add a splash of Thai fish sauce, a squeeze of lime juice to taste. While the vegetables and prawns are cooking, place 4 nests of wholewheat noodles in a separate bowl and cover with boiling water. Drain the noodles after 4 minutes and place a few noodles in the bottom of four warm serving bowls. Serve the prawns and vegetables with the noodles and a scattering of chopped coriander and lime wedges. Cooking tip: Other vegetables can be used in this dish instead of peas, such as baby sweetcorn, fine beans, or broccoli, which all have dietary fibre. Meatless meatballs with a herb flavoured tomato sauce Looking to cut down on red meat? These meat-free meatballs are the perfect substitute. Infused with spices and herbs, this dish is packed full of flavour and high in resistant starch and dietary fibre – all of which contribute towards a healthy gut. Resistant starch is important in the diet because it resists digestion, passing directly through the small intestine to the colon. It is then fermented by “good bugs” to butyrate which plays a key role in reducing inflammation, increasing calcium absorption, and maintaining the health of the gut lining. Prep time: 10 minutes | Cooking time: 30 minutes Serves: 4-6 (makes 20 “meat” balls) Ingredients: 1 tbsp olive oil 1 medium onion, chopped 2 cloves garlic, peeled and roughly chopped 1 x 400g tin chickpeas 1 x 400g tin red kidney beans 1 tsp ground cumin 1 tbsp wholemeal four 1 medium egg Pinch of black pepper Zest from 1 lemon 3 tbsp chopped coriander both leaves and stalks 1 tbsp chopped parsley 50g fine breadcrumbs e.g. panko Rapeseed oil for shallow frying For the tomato sauce: 1 tbsp olive oil 2 cloves garlic, peeled and chopped 2 x 400g tin chopped tomatoes ½ tsp dried oregano 2 bay leaves Method: Warm the olive oil in a small frying pan, add the chopped onion and cook for 5 minutes until soft but not coloured. Set aside and allow to cool. Meanwhile, place the chopped garlic in a food processor with the drained chickpeas, kidney beans, cumin, wholemeal flour, and egg. Pulse the bean mix so there are still a few visible lumps of beans and chickpeas. Transfer to a bowl and season with pepper. Add the fried onion, lemon zest, chopped coriander and parsley to the bean mix. Keep a little coriander back for garnish. Place the fine breadcrumbs onto a plate. Take a tablespoon of the bean mix (about 30g), shape into a ball, roll in the breadcrumbs and place on a sheet of baking parchment paper. Continue rolling the balls until you have used up all the mixture. Place the balls in the fridge while you make the tomato sauce. Preheat the oven to 200C/400F/gas mark 6 and place a shallow oven proof dish in the oven to warm. Warm the olive oil in a small saucepan and add the chopped garlic and cook gently for 5 minutes. Add the chopped tomatoes bay leaf, and dried oregano to the saucepan and heat until they just begin to simmer. Continue to simmer the tomato sauce while shallow frying the meatless “meat” balls. Remove the ‘meat’ balls from the fridge and shallow fry in oil for about eight minutes, or until the breadcrumbs are golden, draining the balls on kitchen paper after frying. You may have to do this in batches and place the balls in the dish warming in the oven. Pour the tomato sauce over the ‘meatballs’ and serve with brown rice and a scattering of parsley and coriander. Cooking tips: For a gluten free option, use gluten free bread to make the breadcrumbs by cutting it into small cubes and adding it to a food processor until fine. Spread the crumbs on a parchment lined baking sheet and bake for 20 minutes at 200°C until golden. Once the breadcrumbs have cooled, add seasonings of choice. For a vegan version, leave the egg out of the recipe and replace the flour with chickpea (gram) flour to help to bind the bean mixture together more firmly. This version of the recipe will be slightly crumblier than the original one, but the meatballs will hold together and taste great. Mexican chicken and black bean chilli Make it a Mexican night without the worry of gut troubles. This recipe contains more than 10 different plant foods and is high in dietary fibre thanks to the black beans. The dish also contains two types of onions. Onions are a major source of inulin, a naturally occurring prebiotic. Inulin travels through the gut and is fermented by the colon helping healthy gut bacteria to thrive, keeping the immune system functioning efficiently and the cells lining the gut healthy. Prep time: 15 minutes | Cooking time: 30 minutes Serves: 4 Ingredients: 1 tbsp olive oil 1 medium onion, peeled and thinly sliced 2 cloves of garlic, peeled and chopped 30g bunch of fresh coriander, stalks and leaves chopped separately 1 tsp ground cumin ½ tsp ground coriander 1 pinch of dried chilli flakes 2 skinless chicken breasts, cut into 1cm strips 1 x 400g tins of chopped tomatoes 1 x 400 g tin of black beans, drained For the tomato salsa: 4 ripe tomatoes, roughly chopped 1 green chilli, seeds removed and chopped 3 spring onions, trimmed Juice of 1 lime 1 tbsp olive oil To serve: 4 wholemeal flour tortillas 1 little gem lettuce, leaves pulled apart and torn 100g low fat Greek style yoghurt Method: Warm the olive oil in a large pan and add the sliced onions and chopped garlic. Cook gently for 5 minutes until soft. Sprinkle the chopped coriander stalks, ground cumin, coriander and chilli flakes into the pan and add the chicken strips, turning them in the hot oil. Add the chopped tomatoes and bring to the pan to the boil. Reduce the heat and simmer the chicken, partly covered, for 20 minutes. Finally, add the drained black beans and cook for another five minutes. The chicken and bean mixture should be quite thick. Mix the chopped tomatoes, green chilli and spring onions and place in a small bowl. Add the chopped coriander leaves, a squeeze of lime juice (to taste) and a drizzle of olive oil Warm each tortilla in a hot frying pan or griddle until the outside begins to char. Place the chicken and bean mix, torn lettuce leaves, a dollop of Greek yoghurt and a tablespoonful of salsa on the tortilla and fold in half. First, they came for our energy bills. Now, they’re waging war on our beloved fish and chips. When will the tyranny end? Probably not any time soon and certainly not in Padstow, where Rick Stein has decided to add a £2 surcharge for extras like gravy, curry sauce and aioli at his fish and chippy. Apparently even celebrity can’t protect you from “food inflation, energy costs and rising wages”. Naturally, all hell broke loose among Padstow punters, who were outraged at the additional cost to their already £20 order. “I’ve always felt that there’s something of the night about him,” one decried. “Let’s boycott it,” exclaimed another. Let me add an unpopular opinion to the opprobrium. Back off, penny pinchers. Ketchup doesn’t come for free just because you decided to dine at Stein’s. It’s a product like any other, and it comes with a price. Why should Stein, or any other restaurant, have to pay it? As a restaurant critic, I’m aware that dinner is getting quite dear. But my advice for anyone complaining about prices is: have some perspective. My initial thoughts on hearing the news from Padstow were twofold. Firstly, if you don’t want to pay upwards of £20 for fish and chips, why don’t you just… go somewhere else? Stein’s is hardly the only joint in town. It’s also not the highest rated so if you are splashing the cash, splash it elsewhere. Secondly, what do people expect? Prices are going up in every aspect of our lives. Restauranteurs aren’t immune to that – they face exactly the same problems we do, if not more. The only thing alarming about the news is that even a brand as big as Rick Stein’s is struggling to survive. For a sachet of Heinz mayonnaise, sure, Stein should probably suck it up (though I imagine that, too, costs more these days). But is it so far-fetched to charge for condiments that are made in house, on the day, with quality ingredients, by trained chefs? Yes, Stein could just plonk it onto his already extortionate prices (£16.95 for cod and chips? You must be joking), but I imagine you might have a thing or two to say about that as well. At least he’s giving you the choice of paying for condiments at all. If you replicated the recipe at home, I’d be surprised if you could get the ingredients for under £2 in the supermarket. That perspective should extend to the impact our changing climate has had on fishing. We’re catching far fewer fish, which has driven up the price of a catch by 11 per cent in the last year. Politics also plays a role, where tariffs on Russia, which previously supplied 40 per cent of white fish in the UK, have forced fishermen to cast their nets elsewhere. The cost of vegetable oil has also gone up by 80p per litre. Given the fish and chip industry uses somewhere in the region 100,000 tons of the stuff, that’s an enormous cost for restaurants to shoulder. Even potatoes are heading upwards of £400 per ton due to increased fertiliser costs and the impact of last year’s hot summer. Then there’s the energy crisis – businesses don’t enjoy a price cap. You can see what I’m getting at. It’s a perfect storm. While arguments that a business as big as Stein’s should be able to absorb the costs somewhere in the empire are totally fair, the news reflects the struggle of all restaurants to reconcile spiralling costs with diner expectations. Earlier this year, Mandy Yin, owner of London laksa bar Sambal Shiok, responded to complaints from diners that prices were too high with a detailed breakdown of how much it costs to produce a single dish. From a portion of their £13 fried chicken, the business only makes 30p. This whole debacle also reminds me of a conversation I had recently with Charlie Bigham, a household name mainly for his boujie “ready meals” (he despises the term). When I asked him to justify why his fish pie now costs around £10 for two people, he gave me the usual spiel about rising costs etcetera, then asked: but why are we so obsessed with paying less and less for food? If we care about the quality of the produce, the impact on the environment and fair pay for the people that work in the industry, shouldn’t we be prepared to pay a bit more? For those lucky enough to be in the contingent that can afford fish and chips, £2 curry sauce might not be the hill to die on. Don’t get me wrong: I think it’s outrageous. But I don’t blame the restaurants. Next time you’re in Padstow, a little understanding, perspective and kindness would go a long way. London’s best new restaurants: From Spanish-Welsh fusion at Mountain to British kitsch at 20 Berkeley
Against all odds, London’s food scene is still thriving. Proof is in the unfathomable number of new restaurants that open every week in the capital, and the thousands of diners still clamouring for a booking. It’s almost impossible to keep on top of. But, as a professional eater (or, more aptly, snob), here’s a non-exhaustive list of favourites that have sparkled in the past 12 months. Some of our recommendations are as follows. Get elbow-deep in a steaming cauldron of seafood at Brat-famous Tomos Parry’s Mountain in Soho (the only one to earn five stars from us, if the accolade exists). Gorge on goat curry in The Good Front Room, Dom Taylor’s well-earned prize for winning Channel 4’s Five Star Kitchen. Go classic at Paris-abroad eatery 64 Goodge Street or Mayfair’s grandiose 20 Berkeley, an ode to the brilliance of British produce. Or have fun at Papi, the new home for pandemic troublemakers Matthew Scott and Charlie Carr. There’s much more, and surely more to come. Stay tuned (and hungry). Mountain ★★★★★ Brat is back. Well, more specifically, its head chef and co-founder Tomos Parry is, with his new opening Mountain, in Soho. The formula is much the same as what gave the 2018 hit its cult status: wood-fired cooking combining Spanish influences with Parry’s Welsh heritage, plus excellent wine. Well, if it ain’t broke… And it certainly ain’t. Sobrasada toasts with honey and guindilla pepper pray at the altar of salt, spice, smoke and fat. I never thought a bowl of tripe would get people so excited, but apparently it does. A spider crab omelette, its innards submissively oozing out like one of those satisfying TikTok videos, has even the egg-adverse at the table gleefully tucking in. Another in our party, fists to the table, demands bread – baked onsite, of course, the butter organic, cultured, from Cardigan. But among many myriad must-haves, there is one that’s truly worth shelling out for: the Anglesey lobster caldereta (£90 for three to four or £120 for four to five). A steaming cauldron (hence the name) of charcoal-roasted Welsh lobster chunks bathing in a broth made satiny from the velvet crab and grilled salt cod stock. Get elbow deep, don’t wear white, let them demand bread. If turbot put Brat on the map, this is the dish that will define Mountain. And just like that, Brat grew up. There’s no elbow-grazing Shoreditch hipsters here, for one thing. Everything that made its younger sibling over-hyped (my DMs are closed) makes Mountain glorious. Do we really need another French bistro? It’s possible to get bored of bon bons and beurre blanc, believe me. What’s not boring is curried goat that falls apart at the slightest tap of a fork in a sauce as thick as blood, mopped up with still warm roti bread or smeared with fingers or straight-up slurped from the bowl. Can I take a bath in it? Salt cod and ackee (that oddly savoury, scrambled egg-like fruit) fish cakes with confit garlic and scotch bonnet aioli. A single dark rum-caramelised king prawn in a nest of dasheen salad and coconut sambal. Unwrapping a banana leaf like a gift to find ginger marinated sea bream. Even dessert has me salivating at the memory: a toasted spiced bun with sweet blue cheese, sour cherries and plantain chutney. Dessert should always have a hint of savoury. No, I’m not in Brixton. I’m in The Good Front Room at the five-star West End hotel The Langham, chef Dom Taylor’s prize for winning Channel 4’s Five Star Kitchen, in a room with ceilings as high as a church, rubbing elbows with punters more familiar with paying £200 for dinner than under £20. Taylor’s real triumph, though, is his menu, inspired by Caribbean flavours and a south London upbringing, which is the perfect cure for fine dining’s chronic case of aridity in the capital. Curried goat belongs here. It’s also the best possible justification for never seeing a French menu again. 1C Portland Pl, London W1B 1JA | langhamhotels.com/en/the-langham/london/good-front-room | 020 7636 1000 64 Goodge Street ★★★★☆ In a world full of innovations, sometimes it’s nice to revel in the classics. And call me Jackie Collins but is there anything as classic as a vol-au-vent? They’re still enjoying their moment in the sun and it shines particularly brightly at 64 Goodge Street, the newest opening from the Woodhead Restaurant Group, who can be reliably called upon for reliably brilliant eateries. Actually, it’s pretty dimly lit at 64 in a Parisienne sort of way – sans red and white tablecloths – which is precisely the point. To steal a phrase from Diana Henry, it’s hard to eat this well in Paris. The aforementioned vol-au-vent is thankfully not stuffed but exists as an extremely fluffy mopping up tool for the very French sauce américaine. The lobster tail that comes with it might be one of the best I’ve had. Elsewhere on the French classics bingo card are snail, bacon and garlic (need I say more?) bon bons, which are teed up like gooey golf balls. Nicoise makes a rare appearance, but correctly dumps tuna for rabbit. What would a counterfeit French bistro be without beurre blanc? This one is thicc and slides under perfectly plump scallops and lentils. Sea bass or saddle of lamb are tempting, but instead we mistakenly tuck into overly salty squab pigeon, which is somewhat rectified by a scoop of ice cream for dessert. Really, it’s the exclusively burgundy wine list that got me through the door. I don’t want to develop a habit of eating my words but perhaps there’s room for one more excellent French restaurant in London. Already in its groove when I visit just a week after opening, 64 Goodge Street could be it. Head chef Stuart Andrew has nailed French food without the faff – just don’t look at the bill and it’s no different to dining in Paris. 64 Goodge Street, London, W1T 4NF | 64goodgestreet.co.uk | 020 3747 6364 20 Berkeley ★★★★☆ Eschewing the kitsch party-restaurant theme that seems compulsory in this part of town, Mayfair’s 20 Berkeley promises “the feeling of being in a home, the British Isles your back garden”. Well, if your home is an enormous Georgian-era country manor house in central Mayfair, that is. Navigate this veritable warren and unfold the origami-style menu, though, and you’ll realise this isn’t the same kettle of fish as, ahem, Sexy Fish, Amazonico, Annabel’s or Bacchanalia, to name a few of its noisy neighbours. If the menu is a love letter to excellent British produce, then the language of love is a plump scallop scantily clad in a sliver of lardo, canoodling a hot-in-the-middle black pudding tortellino in a bath of foamy sorrel veloute. It’s the crunch of a deep fried courgette blossom, the slick ooze of the smoky cheese within, a lick of elderflower honey. It’s gently teasing the flesh of a slow-grilled turbot away from the bone, using confit potatoes dribbled in aioli to mop up its juices. We longed for the Herdwick lamb, jutting pink and proud from a tomato fondue, or the brazenly butch rib-eye that prompts sighs of content from a neighbouring table. Alas, bellies full, we allow the Nipperkin bar below and its serious slinger of seriously good cocktails Angelos Bafas (formerly of personal favourite Soma in Soho), to envelop us. First a highball concoction of whisky, meadowsweet, strawberries, Earl Grey and strawberry “paper”, then martinis that don’t mess around, and then… I forget. You know it’s a night to remember when you simply don’t. Mayfair has been calling out for a place like this, and thank god 20 Berkeley answered. 20 Berkeley Street, London, W1J 8EE | 20berkeley.com | 020 3327 3691 Papi ★★★★☆ My visit to Papi, from Hot 4 U’s Matthew Scott and Wingnut Wines’ Charlie Carr, in London Fields, turned out to be a lesson in why pairing your guest with the restaurant is just as essential as pairing Cab Sav with steak. As a not-at-all-cool person, I wanted to bring a cool friend along to cool new Papi – not realising the menu was so heavily seafood focused and forgetting her aversion to anything remotely fishy. At the two-chef counter, within bantering distance of Scott and co, I had a front row seat to all the delicious things we weren’t ordering. A mound of clams drenched in bright, briny red pepper romesco. Huge langoustines, naked but for dashi vinegar and roe. Oysters… sigh. And though I am forced to make decidedly unfishy choices, the food, as the kids say in the part of town, slaps. Rebel coppa with mustard seeds gets us salivating. Hunks of winter tomato (better than summer’s, I’ll be taking no further questions) and shredded shiso leaves are glazed in a holy trinity of kecap manis, black garlic and black vinegar. We lick the plate clean. Scott points out a bottle of the stuff on the counter. I consider necking it. I’m happy to be persuaded out of my resentment for garlic bread when a grilled, fermented (squidgy and cute) potato cake topped with whipped ricotta and wild garlic arrives. If the food is fun to eat, the wine is just as fun to drink (when isn’t it?). For guaranteed great vibes with a dose of nostalgia, you’re in the right place. They’re just as serious about food and wine as they are about a good time. Go hungry, get a counter seat, but, most importantly, don’t take someone who doesn’t like seafood. 1F Mentmore Terrace, London Fields, E8 3DQ | papirestaurant.com | 07961 911 500 Portrait Review by Lucy Thackray ★★★★☆ It’s possible that you’ve never paid much attention to London’s gallery and museum restaurants, but once you start looking for them, there are many. They’re not the edgiest joints in town, nor somewhere you’d drop in for an impromptu bite. Instead, what they’re great for is a gift – an art fix and a posh lunch or dinner as a day out. I have such a food-and-art pairing in mind when I take my dad to The Portrait, the new Richard Corrigan restaurant at the National Portrait Gallery, the final touch to a major three-year renovation of the gallery that finished in June. It certainly is a glow-up, but the light and minimal design lets the view (which is pretty spectacular) and the food do the talking. Here’s what it has to say: instantly intriguing things about artichoke with crab mayonnaise and kombu, “snails bolognaise” over conchigliette, a duck heart vol au vent, pig’s trotter with borlotti beans and something described only as “cauliflower, yeast, seeds” (we skip that one). Much of it is what you’d expect from Corrigan – earthy flavours from the UK and Ireland, plenty of fish and veg, but with a few curiosities thrown in. The first cocktail on the list is actually a gin “mini-tini” (a trend I shan’t be supporting) with a blue-cheese stuffed olive, which I’m sure would have made for an interesting aperitif had they not run out of blue cheese on the night. Haunting visits to Chiquitos and Wahaca as a teenager haven’t placed the cuisine high up on my list of frequent cravings. There’s a lot of bad tacos out there. But at Zapote, the brainchild of Mexican chef Yahir Gonzalez and hospitality veteran Tony Geary (you can thank him for Sketch), I’m prepared to eat my words… and a fair few tacos. The tortillas are knocked out fresh every day for the purposes of mopping up smooth and zingy guacamole, surfing under yellowfin tuna and spicy crab (piquant, fishy, delicious), and hosting beef tartare, which comes with a side of roast bone marrow in case you felt the bread-to-meat ratio was off. Arguably its best role is in a basket alongside thick slices of just-charred lamb neck on a smoked aubergine and tamarind puree. Some are hits, others are misses. Cutting a single tortilla in half to share with my date in full view of an open kitchen full of chefs seems like sacrilege, though. Stray from the tacos, however, and Zapote comes into its own. Like its older sister, Epicurus takes its culinary cues from across the pond – this time putting an Israeli twist on the all-American diner. The punny menu includes delights such as the “Oof Gozal” – chicken wings coated in a yellow Amba mango and Scotch bonnet sauce. Despite the fearsome chilli, these wings are barely spicy, favouring the flavour of the Scotch bonnet over the heat. They are incredibly moreish and the fact that your fingers end up being absolutely covered in sauce is only an invitation to get licking. You should also definitely get the “Papi Chulo”, a mix of crunchy deep-fried okra and soft padron peppers covered in spices that come with a lemony-garlicky-chilli aioli for dipping. Another honourable mention goes to the Epicurus single decker burger, which is also available as a double. It contains some of the richest, fattiest ingredients I’ve ever seen between buns, like bone marrow aioli and Baron cheese, and it does border on being a bit too unctuous. Days were well spent gorging on the local speciality of reverse-spatchcocked chicken brushed thrice with chilli oil and glugging local vino verde. It rained most of the time, if that helps. Back in London, though, and similar offerings are slim but the weather is much the same. Portuguese, alongside Spanish and those other misunderstood Mediterranean cuisines, and particularly the food of the Algarve is not well represented in the capital. Except at Casa do Frango, which literally translates to “chicken house”, and is strictly Algarvan. Say no more, I’m there, at their newest location in Victoria, to be precise. Don’t expect mind-blowing, out-there cuisine but do expect a truly authentic taste of the Algarve. The perfect order looks like this: order something drenched in their secret recipe piri piri oil to start (the prawns will do) and dip hunks of sourdough into it because… obviously. The main event is the piri piri half chicken (also comes in oregano or lemon and garlic for the spice intolerant/wimps out there). Shred that between two of you along with the African rice – with chorizo, plantain and shards of crispy chicken skin – and a salad, then finish with a chocolate mousse, an Algarvan classic found in most chicken houses. Stay within these strict parameters and you’ll understand why millions of Brits flock to Portugal’s southern tip every year. There’s various other things on the menu and seasonal updates but let’s not pretend like you’re here for anything other than chicken. Like I said, minds won’t be blown but a good time will be had. Tea enthusiasts are up in arms about a new teabag in the works from PG Tips, which promises to brew in just 60 seconds. While most tea fanatics reccommend brewing a cup of English breakfast tea for three to five minutes, the majority of people are too time-poor or impatient to let their teabag infuse for more than one minute. PG Tips hopes it has come up with a solution by investing £50m on a new a new blend and bag that infuses in just 60 seconds, a venture that has taken the company two years to develop. In its research, the PG Tips found that 85 per cent of tea drinkers leave the bag in to brew for under a minute, while a staggering 45 per cent bin their teabag after less than 30 seconds. Tea experts at the company have developed a new design that features a square bag with room for the leaves to infuse. It is designed to not fold over on itself, which is said to improve the overall taste of the tea. If the bag folds, the leaves don’t have room to expand and can leave the tea lacking flavour. The company claims its new blend has the “perfect particle size” for a quick cuppa. The new blend is grown at high altitudes in Kenya and Rwanda, which the brand claims provides a better taste. However, some tea fanatics are not convinced. Jane Pettigrew, course director at the UK Tea Academy toldThe Times that the time taken for brewing is a key part of a tea break ritual, and rapid teabags, like PG Tips’s new creation, are an abhorrence. “We relish the three or four minutes it takes to brew a real cup of tea and benefit from the zen-like spirit of tea – the slow brewing of tea creates a magical few minutes in a busy, sometimes frantic day,” Pettigrew told the publication. “I really abhor this kind of ‘innovation’. It is not progress but a massive retrograde step backwards in what tea should be.” More than 100 million cups of tea are made every day in Britain, and 97.5 per cent of those are brewed from a bag, rather than made from loose-leaf variety, according to the UK Tea and Infusions Association. London’s best new restaurants from the last 12 months
Against all odds, none of which need naming, London’s food scene is still thriving. Proof is in the unfathomable number of new restaurants that open every week in the capital, and the thousands of diners still clamouring for a booking. It’s almost impossible to keep on top of. But, as a professional eater (or, more aptly, snob), here’s a non-exhaustive list of favourites that have sparkled in the past 12 months. Some of our recommendations are as follows. Get elbow-deep in a steaming cauldron of seafood at Brat-famous Tomos Parry’s Mountain in Soho (the only one to earn five stars from us, if the accolade exists). Gorge on goat curry in The Good Front Room, Dom Taylor’s well-earned prize for winning Channel 4’s Five Star Kitchen. Go classic at Paris-abroad eatery 64 Goodge Street or Mayfair’s grandiose 20 Berkeley, an ode to the brilliance of British produce. Or have fun at Papi, the new home for pandemic troublemakers Matthew Scott and Charlie Carr. There’s much more, and surely more to come. Stay tuned (and hungry). Mountain ★★★★★ Brat is back. Well, more specifically, its head chef and co-founder Tomos Parry is, with his new opening Mountain, in Soho. The formula is much the same as what gave the 2018 hit its cult status: wood-fired cooking combining Spanish influences with Parry’s Welsh heritage, plus excellent wine. Well, if it ain’t broke… And it certainly ain’t. Sobrasada toasts with honey and guindilla pepper pray at the altar of salt, spice, smoke and fat. I never thought a bowl of tripe would get people so excited, but apparently it does. A spider crab omelette, its innards submissively oozing out like one of those satisfying TikTok videos, has even the egg-adverse at the table gleefully tucking in. Another in our party, fists to the table, demands bread – baked onsite, of course, the butter organic, cultured, from Cardigan. But among many myriad must-haves, there is one that’s truly worth shelling out for: the Anglesey lobster caldereta (£90 for three to four or £120 for four to five). A steaming cauldron (hence the name) of charcoal-roasted Welsh lobster chunks bathing in a broth made satiny from the velvet crab and grilled salt cod stock. Get elbow deep, don’t wear white, let them demand bread. If turbot put Brat on the map, this is the dish that will define Mountain. And just like that, Brat grew up. There’s no elbow-grazing Shoreditch hipsters here, for one thing. Everything that made its younger sibling over-hyped (my DMs are closed) makes Mountain glorious. Do we really need another French bistro? It’s possible to get bored of bon bons and beurre blanc, believe me. What’s not boring is curried goat that falls apart at the slightest tap of a fork in a sauce as thick as blood, mopped up with still warm roti bread or smeared with fingers or straight-up slurped from the bowl. Can I take a bath in it? Salt cod and ackee (that oddly savoury, scrambled egg-like fruit) fish cakes with confit garlic and scotch bonnet aioli. A single dark rum-caramelised king prawn in a nest of dasheen salad and coconut sambal. Unwrapping a banana leaf like a gift to find ginger marinated sea bream. Even dessert has me salivating at the memory: a toasted spiced bun with sweet blue cheese, sour cherries and plantain chutney. Dessert should always have a hint of savoury. No, I’m not in Brixton. I’m in The Good Front Room at the five-star West End hotel The Langham, chef Dom Taylor’s prize for winning Channel 4’s Five Star Kitchen, in a room with ceilings as high as a church, rubbing elbows with punters more familiar with paying £200 for dinner than under £20. Taylor’s real triumph, though, is his menu, inspired by Caribbean flavours and a south London upbringing, which is the perfect cure for fine dining’s chronic case of aridity in the capital. And call me Jackie Collins but is there anything as classic as a vol-au-vent? They’re still enjoying their moment in the sun and it shines particularly brightly at 64 Goodge Street, the newest opening from the Woodhead Restaurant Group, who can be reliably called upon for reliably brilliant eateries. Actually, it’s pretty dimly lit at 64 in a Parisienne sort of way – sans red and white tablecloths – which is precisely the point. To steal a phrase from Diana Henry, it’s hard to eat this well in Paris. The aforementioned vol-au-vent is thankfully not stuffed but exists as an extremely fluffy mopping up tool for the very French sauce américaine. The lobster tail that comes with it might be one of the best I’ve had. Elsewhere on the French classics bingo card are snail, bacon and garlic (need I say more?) bon bons, which are teed up like gooey golf balls. Nicoise makes a rare appearance, but correctly dumps tuna for rabbit. What would a counterfeit French bistro be without beurre blanc? This one is thicc and slides under perfectly plump scallops and lentils. Sea bass or saddle of lamb are tempting, but instead we mistakenly tuck into overly salty squab pigeon, which is somewhat rectified by a scoop of ice cream for dessert. Really, it’s the exclusively burgundy wine list that got me through the door. I don’t want to develop a habit of eating my words but perhaps there’s room for one more excellent French restaurant in London. Already in its groove when I visit just a week after opening, 64 Goodge Street could be it. Head chef Stuart Andrew has nailed French food without the faff – just don’t look at the bill and it’s no different to dining in Paris. 64 Goodge Street, London, W1T 4NF | 64goodgestreet.co.uk | 020 3747 6364 20 Berkeley ★★★★☆ Eschewing the kitsch party-restaurant theme that seems compulsory in this part of town, at Mayfair’s 20 Berkeley, executive chef Ben Orpwood and the Creative Restaurant Group promise “the feeling of being in a home, the British Isles your back garden”. Well, if your home is an enormous Georgian-era country manor house in central Mayfair, that is. Navigate this veritable warren and unfold the origami-style menu, though, and you’ll realise this isn’t the same kettle of fish as, ahem, Sexy Fish, Amazonico, Annabel’s or Bacchanalia, to name a few of its noisy neighbours. If the menu is a love letter to excellent British produce, then the language of love is a plump scallop scantily clad in a sliver of lardo, canoodling a hot-in-the-middle black pudding tortellino in a bath of foamy sorrel veloute. It’s the crunch of a deep fried courgette blossom, the slick ooze of the smoky cheese within, a lick of elderflower honey. It’s gently teasing the flesh of a slow-grilled turbot away from the bone, using confit potatoes dribbled in aioli to mop up its juices. We longed for the Herdwick lamb, jutting pink and proud from a tomato fondue, or the brazenly butch rib-eye that prompts sighs of content from a neighbouring table. Alas, bellies full, we allow the Nipperkin bar below and its serious slinger of seriously good cocktails Angelos Bafas (formerly of personal favourite Soma in Soho), to envelop us. First a highball concoction of whisky, meadowsweet, strawberries, Earl Grey and strawberry “paper”, then martinis that don’t mess around, and then… I forget. You know it’s a night to remember when you simply don’t. Mayfair has been calling out for a place like this, and thank god 20 Berkeley answered. 20 Berkeley Street, London, W1J 8EE | 20berkeley.com | 020 3327 3691 Papi ★★★★☆ My visit to Papi, from Hot 4 U’s Matthew Scott and Wingnut Wines’ Charlie Carr, in London Fields, turned out to be a lesson in why pairing your guest with the restaurant is just as essential as pairing Cab Sav with steak. As a not at all cool person, I wanted to bring a cool friend along to cool new Papi – not realising the menu was so heavily seafood focused and forgetting her aversion to anything remotely fishy. At the two-chef counter, within bantering distance of Scott and co, I had a front row seat to all the delicious things we weren’t ordering. A mound of clams drenched in bright, briny red pepper romesco. Huge langoustines, naked but for dashi vinegar and roe. Oysters… sigh. And though I am forced to make decidedly unfishy choices, the food, as the kids say in the part of town, slaps. Rebel coppa with mustard seeds gets us salivating. Hunks of winter tomato (better than summer’s, I’ll be taking no further questions) and shredded shiso leaves are glazed in a holy trinity of kecap manis, black garlic and black vinegar. We lick the plate clean. Scott points out a bottle of the stuff on the counter. I consider necking it. I’m happy to be persuaded out of my resentment for garlic bread when a grilled, fermented (squidgy and cute) potato cake topped with whipped ricotta and wild garlic arrives. If the food is fun to eat, the wine is just as fun to drink (when isn’t it?). For guaranteed great vibes with a dose of nostalgia, you’re in the right place. They’re just as serious about food and wine as they are about a good time. I have such a food-and-art pairing in mind when I take my dad to The Portrait, the new Richard Corrigan restaurant at the National Portrait Gallery, the final touch to a major three-year renovation of the gallery that finished in June. It certainly is a glow-up, but the light and minimal design lets the view (which is pretty spectacular) and the food do the talking. The punny menu includes delights such as the “Oof Gozal” – chicken wings coated in a yellow Amba mango and Scotch bonnet sauce. Despite the fearsome chilli, these wings are barely spicy, favouring the flavour of the Scotch bonnet over the heat. They are incredibly moreish and the fact that your fingers end up being absolutely covered in sauce is only an invitation to get licking. You should also definitely get the “Papi Chulo”, a mix of crunchy deep-fried okra and soft padron peppers covered in spices that come with a lemony-garlicky-chilli aioli for dipping. Another honourable mention goes to the Epicurus single decker burger, which is also available as a double. It contains some of the richest, fattiest ingredients I’ve ever seen between buns, like bone marrow aioli and Baron cheese, and it does border on being a bit too unctuous. Boy, am I glad there’s no calorie counts on this menu. Is it worth elbowing your way through the thronging crowds of Camden Lock Market to get to Epicurus? I think it will be. Days were well spent gorging on the local speciality of reverse-spatchcocked chicken brushed thrice with chilli oil and glugging local vino verde. It rained most of the time, if that helps. Back in London, though, and similar offerings are slim but the weather is much the same. Portuguese, alongside Spanish and those other misunderstood Mediterranean cuisines, and particularly the food of the Algarve is not well represented in the capital. Except at Casa do Frango, which literally translates to “chicken house”, and is strictly Algarvan. Say no more, I’m there, at their newest location in Victoria, to be precise. Don’t expect mind-blowing, out-there cuisine but do expect a truly authentic taste of the Algarve. The perfect order looks like this: order something drenched in their secret recipe piri piri oil to start (the prawns will do) and dip hunks of sourdough into it because… obviously. The main event is the piri piri half chicken (also comes in oregano or lemon and garlic for the spice intolerant/wimps out there). Shred that between two of you along with the African rice – with chorizo, plantain and shards of crispy chicken skin – and a salad, then finish with a chocolate mousse, an Algarvan classic found in most chicken houses. Stay within these strict parameters and you’ll understand why millions of Brits flock to Portugal’s southern tip every year. There’s various other things on the menu and seasonal updates but let’s not pretend like you’re here for anything other than chicken. Like I said, minds won’t be blown but a good time will be had. The dish that defines me: Michele Pascarella’s Neapolitan ragu
Defining Dishes is an IndyEats column that explores the significance of food at key moments in our lives. From recipes that have been passed down for generations, to flavours that hold a special place in our hearts, food shapes every part of our lives in ways we might not have ever imagined. I was very young when I started working in a local pizzeria in Caserta, the city near Naples where I grew up. I was 11 years old when I started working there, and stayed on for about eight years before moving to London to start my own business. But during my teenage years, one of the best memories I have is waking up to the smell of my mother’s ragu on Sundays. Neapolitan ragu is a specialty in the region, and we are very proud of it. It’s one of the two most famous varieties of ragu, the other being ragu bolognese, and uses whole chunks of beef and pork rather than ground meat. It must be cooked for a long time over a low heat, for at least eight hours, preferably 10 hours. My mother would get up at 5am to start making hers and it would continue to simmer slowly until the family is ready to eat in the afternoon. Sundays are special because it’s a time for the whole family, including our extended family, to come together and eat at the same table. My family comprised of my parents, my three siblings and myself, and we would usually be joined by my grandparents, aunts, uncles, cousins. We usually had anywhere between 15 to 20 people gathering on Sunday afternoons. It didn’t matter what commitments you had – on Sunday, you have to sit at the table with family. It’s the most important day of the week for us. The ragu is the dish that, for me, brings everything together: passion, love, happiness and strong ties with family. Because I worked late shifts often, I would wake up really late on Sundays, around 11am or 12pm. So by the time I wake up, the beautiful aroma of the ragu that has been cooking since 5am will have filled the whole house. I would wake up so hungry. My breakfast on these days would simply be a hunk of bread, torn and dipped straight into the still-simmering sauce, with some parmigiano reggiano sprinkled on top to help cool it down. Every family has their own way of eating ragu. You can dip bread in it, like I did for breakfast, but it is most commonly eaten with pasta. Some people have it with gnocchi while others might use a short pasta or spaghetti. But it does have to be a robust pasta shape, you can’t have ragu with a really small pasta, or it won’t stand up to the sauce. No one makes ragu like my mother’s. I could go to any restaurant, even those with Michelin stars, and it wouldn’t come anywhere close to hers. I strongly believe her secret ingredient is just her love for cooking for her children, as the dish needs that passion to make it taste so good. I never woke up at 5am to try and make it with her, it was so hard when I was a teenager! But when I did start to learn how to make it, it was very difficult to get up that early. I don’t know how she did it for so many years. In my restaurant, Napoli on the Road, I make a pizza with the slow-cooked ragu as a topping, along with a parmigiano reggiano cream. I call it Ricordi D’infanzia, which translates to “childhood memories” because it holds such strong nostalgia for me. But I still can’t make it like my mother does. When I go home to Caserta to see my family, I do try to wake up at 5am to make it with her. I’m less stressed about work when I’m there so I can usually do it, but when I’m back in London it’s hard to get up at that hour when you finish at midnight at the restaurant. Like most mothers who pass down their recipes, there are no accurate measurements to my mother’s ragu. Sometimes they put some sort of secret ingredient inside and won’t tell you. But I have learnt that you need to be flexible about it, depending on what ingredients are available to you. For example, maybe the tomatoes you buy from the market are too acidic. My mother fixes this by putting a whole potato in the sauce, because its starchiness will help to remove the acidity from the tomatoes. Or, she might add sugar to the sauce to mellow it out. It can be tricky to get it right, so I can only try my best to do better than my mother, but it is hard. I think I will be 80 or 90 years old before I perfect my own version! I’ve lived in London for almost 20 years, but I still miss those Sunday afternoons spent with my family at my uncle’s or grandfather’s house. In London, things are very fast-paced and rushed, you don’t really have time to sit down with people. I try to go back every couple of months, and I really look forward to it. My mother still makes her ragu. Even though nowadays it’s harder to get everyone together, we do our best to keep everyone united. I don’t have any family in London, so it’s important to me to keep that tradition alive when I go home. My dad has never visited me here because he is afraid of flying, but my mother comes fairly often and I’ll make ragu for her when she does. She never says anything bad about it – although, she will tell people: “It’s good… but it can be improved.” Still, I’m glad I have the opportunity to make it for her sometimes and it keeps me connected to home. Seven super simple recipes for each day of National Rice Week
National Rice Week, back this September (11-17 September), is the perfect opportunity to widen your recipe repertoire and discover great value meal ideas to feed all the family. The annual campaign run by the UK Rice Association aims to raise the profile of the British rice sector and encourage more people to choose rice, whether that’s demonstrating the simplicity of cooking it at home or being first choice when eating out. Showcasing dishes using a variety of rice grains, we’ve got seven super simple new recipes for you to try, all of which are tasty, easy to follow and make the most of leftovers and store cupboard staples – like rice! Not only is rice super versatile – in fact, rice is one of the few foods that can be enjoyed sweet or savoury, hot or cold and for every meal of the day – it is also gluten-free and offers a host of nutritional benefits too. With seven dishes using seven types of rice, there’s a new recipe to try every day of the week. Creamy mushroom and chicken rice Serves: 4 Prep time: 5 minutes | Cooking time: 30 minutes Ingredients: 1 tbsp olive oil 2 leeks, trimmed, cleaned and sliced (230g) 3 garlic cloves, sliced 300g mushrooms, sliced 300g Bomba rice 1 litre chicken stock ½ pack (10g) flat-leaf parsley, chopped 4 tbsp sour cream 2 chicken breasts (skin off) Method: Preheat the oven to 180C. Heat the olive oil in a heavy-based casserole dish over a moderate heat, add the leeks and cook for about 6-7 minutes until soft. Add the garlic and mushrooms and cook for a further minute. Add rice, stock and give the rice a good stir. Cover the pan and bake in the oven for about 25 minutes or until the rice has absorbed all the liquid and the grains are just cooked through. Stir in the parsley, sour cream and season to taste. In the meantime, pan fry the chicken in a non-stick pan with a little oil until cooked throughout. To serve, chop up the chicken, then add it to the pan with the rice. Mix to combine. Sprinkle with fresh parsley. Cooks tip: Add some chorizo for extra flavour. Sticky chicken rice bowls Serves: 4 Prep time: 10 minutes | Cooking time: 20 minutes Ingredients: For the rice: 6 spring onions chopped (90g) 1 tbsp coconut oil/olive oil 200g Jasmine rice 400ml coconut light milk 200ml water For the dressing: 1 tbsp maple syrup 1 tsp brown rice miso 1 tbsp soy sauce 1 tbsp rice vinegar 1 tbsp sriracha 1 tbsp toasted sesame oil 2 chicken breasts (skin off) 1 tbsp olive oil To serve: 2 tbsp crushed roasted peanuts Handful coriander/mint 1 spring onion sliced Method: To make the rice, fry the spring onion in a large pan with the oil. Now add the rice, coconut milk and water. Stir then cover pan with lid and simmer until the liquid is absorbed (12-14 minutes). Once the liquid is absorbed, turn off the heat keeping the lid on the rice for 10 minutes. Season to taste. For the dressing, add all the ingredients to a jar and mix to combine To cook the chicken, pre heat oven to 180C. Score the chicken breasts and heat the oil in a griddle or frying pan. Cook the chicken for 7-8 minutes on one side, then flip and cook for 4-5 minutes. Transfer the chicken to a large baking tray and spoon over the dressing. Bake for 5 minutes until they are bubbling. To serve, spoon the coconut rice into bowls, top with the chicken and all the garnishes. Cook’s tip: You can swap the chicken for salmon, tofu or aubergine. Herby rice with harissa roast tomatoes and feta Serves: 4 Prep time: 5 minutes | Cooking time: 25 minutes Ingredients: 200g brown rice For the tomatoes: 300g cherry tomatoes 1 tbsp olive oil For the harissa dressing: 2 tbsp harissa/rose harissa 4 tbsp extra virgin olive oil 1 lemon juice To stir in: 150g feta 10g fresh dill, chopped 15g fresh mint, chopped Method: Cook the rice as per pack instructions. To cook the tomatoes, preheat the oven to 180C. Add the cherry tomatoes to a large baking tray and toss them in 1 tbsp of olive oil. Bake on for 20-25 minutes or until soft and browning a little. Set aside. To make the dressing, add all the ingredients to a jar and mix to combine then season to taste. To sever, toss the rice with the dressing, fresh herbs and feta. Top with the roast tomatoes. Cook’s tip: Make a vegan version by swapping the feta for vegan feta or crispy tofu. Rice salad with salmon, greens and lemon tahini dressing Serves: 4 Prep time: 5 minutes | Cooking time: 20 minutes Ingredients: 200g long grain rice 2 salmon steaks (240g) 1 onion, sliced 100g cabbage greens 1 courgette sliced (200g) For the lemon tahini dressing: Juice of ½ lemon 2 tbsp runny tahini 1 tbsp olive oil 50ml water To serve: Fresh mint Method: To make the rice salad, cook the rice as per the pack instructions. Drain and set aside. In the meantime, pan fry the salmon steaks on a little oil for 2-3 minutes on each side. Set aside and flake up when cool. In a separate frying pan, add the onion and fry for 5-6 minutes. Now add the cabbage and courgette and fry for 2-3 minutes. Add in the cooked rice. To make the dressing, add all the ingredients to a jar and mix to combine. To serve, add the rice and greens to a large bowl, add the flaked salmon and toss lightly to combine. Serve with dressing and fresh mint. Cook’s tip: This also works well with a harissa or classic vinaigrette dressing. Veggie biryani with crispy tofu Serves: 4 Prep time: 5 minutes | Cooking time: 25 minutes Ingredients: For the biryani: 1 tbsp olive oil 1 onion, sliced finely (120g) 2 carrots, chopped up finely (200g) 3 cloves garlic, minced ½ red chilli or ½ tsp chilli flakes 1 tsp turmeric 1 tsp garam masala 3 tomatoes, chopped (350g) 200g basmati rice 500ml vegetable stock 1 can coconut milk (400ml) 150g frozen peas For the crispy tofu: 1 x 200g block firm tofu cut into medium-sized slices 1 tbsp oil To serve: Fresh coriander Method: To make the Biryani, add the oil to a large saucepan pan, heat to medium then add the onions, carrots, garlic, chilli and spices. Fry on a low heat for approx 6-7 minutes until soft. Now add the tomatoes, rice, stock and coconut milk – simmer until the rice is cooked (15-20 minutes) Stir in the peas 2 minutes just before the rice is cooked. Season to taste. To make the crispy tofu, heat a frying pan to medium and add the oil to the pan. Add the tofu to the pan, fry on each side for a few minutes, turning carefully until crispy. To serve, top the rice with the tofu and fresh coriander. Cook’s tip: The rice works really well with prawns or chicken. Sticky mango rice bowls Serves: 4 Prep time: 5 minutes | Cooking time: 20 minutes Ingredients: 100g sushi rice, pre-soaked 250ml plant based milk ½ can coconut milk (200ml) 3 tbsp caster sugar 1 tsp vanilla extract To serve: 1 ripe mango sliced 4 tbsp desiccated coconut, toasted Pistachios Method: In a medium pan, combine the sushi rice, plant based milk, coconut milk and sugar and stir well. Bring to the boil, then reduce the heat and simmer gently, stirring occasionally, for 12-15 minutes or until the rice is tender and has thickened. Stir in the vanilla extract. To serve, divide into bowls and top with the mango, coconut and pistachios. Add a little additional coconut milk if needed. Cook’s tip: This makes a lovely dessert but also can be eaten in the morning for breakfast. Cheesy pea arancini with garlic mayo Makes: 16-18 Prep time: 5 minutes | Cooking time: 25 minutes Ingredients: For the arancini: 800g leftover risotto of choice 150g frozen peas, defrosted Juice of ½ lemon 100g mature cheddar grated To coat the arancini: 200g toasted bread 50g plain flour 2 eggs, beaten with 1 tsp water To serve: Garlic mayo Fresh herbs Drizzle of extra virgin olive oil Method: To make the arancini, mix the leftover risotto with the peas, lemon juice and cheddar, seasoning to taste. Scoop up a golf ball sized amount and roll into a ball. Place the balls on a plate ready for rolling. To make the crumb, break up the toast a little and add to your food processor and blitz until you get a fine crumb and add to a shallow dish. Add the plain flour to a shallow bowl and the beaten egg to another. Roll each arancini in a little flour, then egg and finally coat in the breadcrumbs. Repeat. Drizzle a baking tray with olive oil and add the balls. Bake for 25 minutes – turn halfway through. To serve, top with a little olive oil and fresh herbs. Cook’s tip: Also delicious with some mozzarella in the middle of the arancini instead of the cheddar.
