Joe Lewis, the British billionaire and long-time majority stakeholder in Tottenham Hotspur, pleaded not guilty in New York on Wednesday to charges of insider trading. The previous day, federal officials said the investor “abused his access to corporate boardrooms” and carried out a series of “brazen” instances of financial misconduct, sharing insider information with friends, employees, and former romantic partners. He’s charged with 16 counts of securities fraud and three counts of conspiracy, Reuters reports. “That’s classic corporate corruption,” US attorney Damian Williams said in a video statement on Tuesday. “It’s cheating, and it’s against the law.” Attorneys for the billionaire said he plans to fight the charges. “The government has made an egregious error in judgment in charging Mr Lewis, an 86-year-old man of impeccable integrity and prodigious accomplishment,” David M Zornow said in an email statement to The Independent on Tuesday. “Mr Lewis has come to the US voluntarily to answer these ill-conceived charges, and we will defend him vigorously in court.” In a hearing on Wednesday before US magistrate Judge Valerie Figueredo in Manhattan following Mr Lewis’s early-morning arrest by the FBI, new details about the case against the businessman came to light. As part of a $300m bond, Mr Lewis was ordered to surrender his mega-yacht, the Aviva, as well as his private aircraft. He will now be barred from international travel as the case proceeds. Officials also accused two of his pilots, Patrick O’Connor of New York and Bryan Waugh of Virginia, of profiting off illegal tips from Mr Lewis. Both men have pleaded not guilty, and their lawyers declined requests to comment from Reuters. Prosecutors allege Mr Lewis lent the men $500,000 each in 2019, encouraging them to buy stock in an oncology company in which the billionaire had invested. Mr O’Connor allegedly texted a friend “the Boss has inside info”, a seeming reference to a tip that the billionaire allegedly passed on that the company was about to announce promising clinical results. After the company announced the news, the shares the pilots allegedly bought leapt by 16.7 per cent, and prosecutors allege one of the men labeled a payment to Mr Lewis “loan payback” and listed the company’s stock symbol. In an accompanying civil case, the Securities and Exchange Commission accused Mr Lewis, the pilots, and the billionaire’s former girlfriend Carolyn Carter of insider trading. Officials allege that in 2019, Mr Lewis told Ms Carter about a biotech company that was about to raise capital and potentially increase its share price, even though he was bound by a confidentiality agreement. She then allegedly bought $701,000 in the company, earning a $172,000 on her investment. The Independent has contacted Ms Carter for comment. “When insiders like Lewis take advantage of their access to such information, it erodes public trust and confidence in the fair and efficient operation of our markets,” SEC enforcement director Gurbir Grewal said in a statement. “That’s why we will continue to use all the tools at our disposal to hold accountable those who abuse their positions for personal benefit and the unlawful enrichment of others.” Tottenham Hotspur told The Independent, “This is a legal matter unconnected with the club and as such we have no comment.” Mr Lewis ceased to be a "person with significant control" of the Premier League club last year, following a "reorganisation of the Lewis Family Trusts,” the club said, according to Sky News. He bought a controlling stake in the Premier League club from Lord Alan Sugar in 2001 for £22m. Mr Lewis owns the Tavistock Group, which owns more than 200 assets across 13 countries, including Tottenham Hotspur and UK pub operator Mitchells & Butlers, according to Sky News. Jason Knight has admitted the Republic of Ireland’s new generation must develop a ruthless streak if they are to fulfil their potential. A difficult Euro 2024 Group B campaign drew to its seemingly inevitable conclusion on Saturday evening when a 1-0 defeat by the Netherlands in Amsterdam sent the Dutch through to next summer’s finals in Germany and Ireland home to lick their wounds. Stephen Kenny’s men knew in advance of the game at the Johan Cruyff Arena that even the safety net of a play-off place via the Nations League had evaporated, and they were left to reflect upon home and away defeats by France, the Netherlands and Greece and a return of just six points at Gibraltar’s expense to show for their efforts. Asked what lessons they had learned, Bristol City midfielder Knight said: “It’s fresh, but playing against Holland and France is about having a clinical edge. “That’s been a large part of all the games we’ve been equal in: they’ve taken their chances and we haven’t. We defended well in large of parts of all the games. Looking back briefly off the top of my head, we lacked a bit of creative spark and those goals when we needed to capitalise. “The confidence is good. We’re playing some good attractive football at times. We’ve fallen on the wrong side of results against good teams. France and Netherlands aren’t minnows of world football. “There’s confidence within the group and definitely confidence we’ll turn it around.” Knight, 22, is one of the flag-bearers for Kenny’s drastically overhauled squad which has seen the manager promote from the Under-21 ranks and promote a front-foot approach. His efforts have met with limited success – Ireland have won just six of the 29 competitive games they have played under his charge, and that bottom line is perhaps the most potent weapon in the armoury of those calling for change. Kenny is out of contract after Tuesday night’s friendly against New Zealand at the Aviva Stadium and his future will be decided at a meeting of the Football Association of Ireland’s board on November 28 when members consider a review of the campaign. Whatever the outside noise, the 52-year-old’s his players remain steadfastly behind him and Knight reiterated that message when asked about the future. He said: “Well, my view is that the manager is still here and we’re treating it as so. The manager has been great to me and the players. The chef who hated food as a child
Jeremy Pang doesn’t have a classic chef origin story: he “hated” food as a child. Before he turned 10, the chef, teacher and owner of the School of Wok in London admits: “I hated eating – I honestly did not like food. “Up to the age of, like, nine, it would take my mum two, three hours to get my dinner down me. I just didn’t want to eat – I wanted to go out and play football with my mates. I wanted to go and do stuff and play – I also wanted to eat fish fingers and all the stuff my friends were eating at home.” Pang grew up in a Chinese household and is a third-generation chef. When he was 10 years old, his family moved from the UK to Singapore for two years. Now aged 39 and based in southwest London, Pang says upon making the move, his “life completely changed”. He says: “When you go into hawker centres [open-air food markets] in Singapore, it’s a different world. Every single stall is a specialist in one type of food – not even cuisine. So you might have one uncle who has cooked chicken rice for his whole life, or another person who has cooked Hokkien Mee [a stir-fried noodle dish] for 40 years. “When people are as specialist as that, you cannot not want to eat it. And you see everyone digging into their food with no real etiquette – but the etiquette is the enjoyment of that bowl of food.” From there, Pang says Singapore “opened mine and my sister’s horizons” and he fell in love with food. With Singapore’s proximity to other Southeast Asian countries, he was exposed to a variety of cuisines – from Indonesian to Malaysian – many of which are taught at the School of Wok, along with the Chinese food Pang grew up with. With two kids of his own, aged six and two, Pang says: “I now feel so sorry for my mum.” Before the Covid-19 pandemic, the chef says of his oldest: “It was really difficult to get him to enjoy anything that wasn’t raw carrot or cucumber – which actually is healthy at least, but every day? That’s hard.” The pandemic shifted his son’s eating habits. Pang took a couple of months off and “cooked with him – we started making homemade pizzas, flapjacks – anything he wanted to make. He definitely at that point thought he had more of a Western palate, but I’ve known since he was really young and started eating that he does love Chinese food. “He likes the slightly lighter palate, and home-cooked Chinese food can be quite light – steamed fish, flash-fried vegetables, things like that.” One constant from Pang’s childhood to his family life now is the concept of feasting – serving multiple dishes for one meal. “This is how Asian cuisine is eaten, and should be eaten,” he says simply. “My style of cooking is 100 per cent home cooking anyway, and I’ve grown up with it. If you are Asian, that’s just a way of life. But if you’re not, it’s hard to compute how to get four or five dishes on the table, all hot or in the right state at the right time.” He continues: “Even if when we’re doing midweek meals at home, if I’m cooking Chinese or Southeast Asian just for the four of us, I’ll quite often cook two or three dishes. Those two or three dishes are there to be shared – that absolutely is our way of cooking and eating.” Pang’s latest book, Simple Family Feasts, is all about demystifying this concept for home cooks who haven’t grown up with it. Each chapter is dedicated to a different cuisine – including Chinese, Vietnamese, Singaporean and Indonesian – and shows you how to build a feast, guiding you through which dishes to make and in what order. Balance is crucial to pulling off a feast. “If, for example, you just ate crispy, deep-fried stuff – which is terribly bad for you, but we all love it – yes, you want to eat lots of it at the beginning. But five minutes later, you might get lost in that deep fried, crispy, greasy world, and so you’re likely to stop eating it at some point quite quickly. “But if you had something crispy, you have something opposite that melts in the mouth, you had something soft with a gentle bite, you had crunchy – usually from fresh vegetables or flash-fried vegetables, salads, anything like that – and you had a perfect balance of those textures. Honestly, I think you could just keep eating.” Growing up with this style of cooking must make Pang a brilliant multitasker – something he says is “a great skill to have”, but “sometimes it’s my worst enemy”. “I’m constantly multitasking – I get to the end of the day and I don’t know what’s happened, I sometimes can’t tell you what I’ve done in a day. I might have done a million different things… So in some ways, I’m very good at multitasking – but when I get home, my wife probably wouldn’t agree with that.” Like all of Pang’s cookbooks, this is an “ode to my father”, who passed away in 2009. “He’s the one who instilled that love of cooking and cuisine – especially Asian food. He never really taught me how to cook, he just said, ‘Stand and watch’, or, ‘Taste this and tell me what’s in it’.
